    There are so many different combinations of herbs and spices. It’s difficult to set a hard-and-fast rule! In general, fish goes well with soft herbs (like tarragon or dill). Beef and pork pair well with woody herbs (like rosemary and thyme). Lamb goes well with woody or minty herbs. Finally, chicken and vegetables work well with both soft and woody herbs.

    Are dried herbs as good as fresh herbs?

    We love fresh herbs when they’re in season! They are full of essential oils that infuse fresh flavor into your food, whether you’re cooking it on the grill, using it in a marinade, or roasting it in the oven. Dried herbs are more concentrated because they’re dehydrated, which is not necessarily a bad thing. But, it does mean you won’t want to use as many dried herbs as their fresh counterparts.

    Can I substitute dried herbs for fresh?

    Yes, you can absolutely use dried herbs if fresh herbs are not available! Since dried versions are more powerful than fresh herbs, you only need to use a third the amount. So, if your recipe calls for 3 teaspoons of fresh rosemary, you will want to substitute 1 teaspoon of dried.

    How long are fresh herbs good for?

    If you store them properly, fresh herbs can last up to three weeks. Most herbs can be wrapped in a damp paper towel and stored in the refrigerator. Tender herbs with soft stems (like cilantro and parsley) do well when stored upright in a jar of water. Basil is the one exception to the rule; it is super delicate and needs to be stored at room temperature.

    Should you wash fresh herbs?

    Ideally, you want to wash fresh herbs and let them dry before chopping them. Herbs often have a layer of dust or dirt that covers their leaves. If you don’t wash them, you run the risk of consuming this dirt!
