Here are some really easy side dishes that your party will love to enjoy with their barbecue meals! Guacamole This guacamole recipe is easy and very tasty! Ingredients:
  • 2 avocados
  • Small onion (finely chopped)
  • Clove of garlic (minced)
  • Tomato (chopped)
  • Lime  (juiced)
  • Salt, pepper and paprika
Directions: Peel and mash avocados in a bowl and mix all the ingredients listed on top together. When finished, add more lime and seasonings if needed. Let the guacamole chill in the refrigerator for around a half hour to an hour. Macaroni Salad The classic American side dish! Ingredients:
  • 2 cups dry elbow macaroni ( cooked, rinsed, and drained)
  • Third of a  cup of diced celery
  • Forth of a cup  of minced red onion (soaked in cold water for 5 minutes, drained)
  • One tablespoon flat-leaf parsley (minced)
  • Half of a cup of mayonnaise
  • Three fourths of a teaspoon dry mustard
  • Half a teaspoon of sugar
  • Half  a tablespoons of cider vinegar
  • Three tablespoons of sour cream
  • Half a  teaspoon of kosher salt and pepper
Directions: In a large bowl mix the macaroni, celery, onion, parsley. In a small bowl for dressing, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt/pepper. Pour the dressing over the salad and stir to combine. Potato Salad Everyone will ask you for this recipe! Ingredients:
  • Four pounds of Idaho potatoes
  • Four extra-large eggs (hard boiled)
  • Cup of mayonnaise
  • Four green onions (finely chopped)
  • Three stalks of celery (finely chopped)
  • Table spoon of yellow mustard
  • Half table spoon of salt and pepper
Directions: In a large pot with water, add potatoes and then cover. Bring to a boil and cook for around 25 minutes or until tender, drain and then let cool. Peel cooked potatoes and cut into small chunks and put them in a very large bowl. Additionally, peel and finely chop hard boiled eggs and add to bowl. Add mayonnaise, green onions, celery, mustard, pepper and salt. Mix until all ingredients are well combined. Cover and let the potato salad chill in the refrigerator for around 3 hours before serving.
