Hot wings make the perfect appetizer or snack for a barbecue. Every wing lover has his or her own favorite hot sauce recipe, but individuals who are new to the world of barbecued hot wings should consider using a basic recipe that relies on a simple sauce that will leave your taste buds begging for more. Marinating the wings beforehand allows the flavors to penetrate into the meat, and grilling them over indirect heat prevents the meat from drying out. Stop your search for the perfect wings and follow this quick recipe on how to make BBQ wings in less than one hour.
3 pounds of chicken wings
2 Tbsp. vegetable oil
1/2 cup (8 Tbsp or 1 stick) unsalted butter
12 Tbsp hot sauce (Crystal, Texas Pete, Tabasco, etc)
2 teaspoons Worcestershire sauce
1 teaspoon salt
1 teaspoon sugar
1 teaspoon garlic powder
1 teaspoon black pepper
To make the sauce, mix all of the ingredients together in a small pot set over low heat and stir continuously until the butter melts. When the butter melts, whisk the sauce off the heat and set aside. It should continue to be liquid throughout the food preparation process. If it begins to strengthen, heat it up simply enough to melt it, whisking all the time. You do not want this sauce to boil.
Toss the wings with the grease and the salt, and arrange in one layer on the grill set over low heat. If you are making use of charcoal or wood, it will be very hard to do this, so set your fire on one side of the grill and arrange the wings on the other side, far from the direct heat. You desire them to prepare slowly, with little or no sizzle. Cover the grill and cook like this for 30 minutes.
